Roasted Buttercup Squash with Shallots, Sage, and Pecans
Roasted Buttercup Squash with Shallots, Sage, and Pecans Roasted Buttercup Squash with Shallots, Sage, and Pecans
Buttercup squash is roasted and sauteed with shallots, sage, cranberries, pecans and brown sugar. Delightful.
SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 40 Minutes
Ingredients

1 Buttercup squash
1 Tbsp. Butter plus 1 Tbsp. Butter
2 Shallots, thinly sliced
3 Sage leaves, julienned
1/4 cup Dried Cranberries
1/2 cup Pecans, roughly chopped
2 Tbsp. Brown Sugar

Directions
Step 1  Step 1:
Preheat oven to 400 degrees F. Cut squash into four sections, remove seeds and rinse. Place on greased baking sheet and spray the flesh of each section with cooking spray. Salt and pepper each section. Place in oven and roast for 30 minutes.
 
Step 2  Step 2:
Take squash out of the oven and allow to cool slightly. Remove flesh from skin and cut into 1-2 inch chunks.
 
Step 3  Step 3:
Melt one Tbsp. of butter over medium heat and add shallots and sage. Brown shallots and sage 2-3 minutes. Melt the other Tbsp. of butter into the mixture.
 
Step 4  Step 4:
Add Squash and saute for one minute. Using a flat spatula works well to get under the squash so it doesn't break apart. Add dried cranberries, pecans and brown sugar. Stir one minute more. Salt and pepper to taste. Serve.
